This is where trash turns into treasure. Millions of disgusting, leaking bags of rotting food collected from New York City streets every week are digested and spat back out as “black gold” as part of the city’s fast-growing compost initiative. The arduous process sees the apple cores, spoiled spinach bunches and greasy boxes squeezed, cooked and pummeled for months — all while being fiercely protected from hungry birds — until they are transformed into a fine, nutrient-rich dust that is returned to New Yorkers for their very own gardens.
