Amaya Cookie Diaz – the 19-year-old accused of stabbing a mother of five in Texas – is out from behind bars after posting bond this week, The Post has learned.   Cookie along with her sister Kitty Mia Diaz, 21, and their 21-year-old friend Kyandra Renee Faz, are each facing first-degree murder charges after police say Cookie repeatedly stabbed Caroline “Caro” Peña during a violent, broad-daylight fight in the small border city of Del Rio on June 25.   The Diaz family apparently coughed up $200,000 cash to post Cookie’s $2 million bond in order to free her from lockup on Tuesday – even while her sister remains behind bars, reps from the Val Verde County Sheriff’s Office and Correctional Facility, confirmed on Thursday.
